1 pineapple , chopped ( the peel and trimmings of )
plastic wrap
cheesecloth

Instructions

1.In a large jar, dissolve the brown sugar in hot water and allow it to cool.
2.Add in the chopped pineapple, including the trimmings and peel.
3.Cover the jar with plastic wrap and poke holes in it.
4.Secure the plastic wrap with a rubber band and use the cheesecloth to cover the jar.
5.Place the jar in a dark and cool place to ferment for 1 month.
6.After a month, strain the liquid and discard the solids.
7.Transfer the liquid to a clean jar and seal it tightly.
8.Allow the vinegar to sit at room temperature for 2-4 more weeks, or until it reaches your desired level of acidity.
9.Store the finished vinegar in a cool and dark place and use it as desired.
