Ingredients

500 g pork liver
300 g veal
2000 g pork belly ( with rind )
250 g onions
60 g salt
3 tablespoons white pepper , ground
1 tablespoon marjoram
2 teaspoons pimientos , ground
1 teaspoon nutmeg , ground
1 teaspoon ginger , ground
1 teaspoon cinnamon , ground
2 cups boiling water
Liverwurst, also known as Leberwurst in German, is a type of sausage spread made from liver, pork, and spices. It is a popular delicacy in Germany and can be enjoyed as a snack or as part of a meal. This homemade version allows you to adjust the flavor and texture to suit your taste. It can be spread on bread or crackers and topped with mustard, pickles, or cheese for added flavor.

Instructions

1.Rinse the pork liver and veal under cold water and pat dry.
2.Cut the pork belly, onions, liver, and veal into small pieces and place them into a large mixing bowl.
3.Add salt, white pepper, marjoram, pimientos, nutmeg, ginger, and cinnamon to the mixing bowl, and mix everything together with your hands until well combined.
4.Working in batches, place the mixture into a meat grinder or food processor with the rind attached to each piece of pork belly until the mixture becomes well-ground.
5.Add boiling water to the mixture, and mix until everything is evenly incorporated.
6.Fill the mixture into a sausage stuffer and stuff it into cleaned sausage casings.
7.Poach the sausages in hot water for about 1 hour until they reach an internal temperature of 160°F.
8.Remove the sausages from the water, let them cool for about 10 minutes, and then refrigerate them for at least 24 hours before serving.
