Ingredients

3 lbs plain wheat dry malt extract
1/3 lb caramel malt , crushed
1/4 lb flaked wheat
1/2 ounce liberty hop pellets
1/4 teaspoon Irish moss ( boil 15 minutes- to help remove solids )
1 package dry ale or 1 package brewer 's yeast ( Coopers preferred )
2 - 2 1/2 lbs blackberries ( frozen or fresh )
1/2 cup corn sugar ( to prime )

Instructions

1.Begin by steeping milled caramel malt and flaked wheat in 2.5 gallons of hot water at 155F for 30 minutes.
2.Remove grains and stir in dry malt extract until completely dissolved.
3.Boil the wort for 60 minutes, adding 3/5 oz liberty hops at the beginning and 1/2 oz liberty hops at the end.
4.In the final 15 minutes of the boil, add 1/4 tsp Irish moss.
5.After the boil, cool the wort to 70F and transfer it to a fermenter, adding enough cold water to make a total of 5 gallons.
6.Once the wort is in the fermenter, pitch the yeast.
7.After 7 days, add 2-2.5 lbs of mashed blackberries to the fermenter.
8.Allow the beer to age for an additional 7-14 days before bottling with 1/2 cup of corn sugar to prime. Allow the beer to carbonate for 2 weeks before serving.
