2 tablespoons soy sauce
1 teaspoon mirin
1 tablespoon sake

6 fresh shiitake mushrooms , stems removed
1/4 cup rice vinegar

Instructions

1.Combine the rice vinegar and sugar in a small bowl and stir until the sugar is dissolved.
2.In a medium bowl, sprinkle the shrimp with salt. Heat 1 tablespoon of oil in a non-stick skillet over medium-high heat, add the shrimp, cook for 2-3 minutes on each side or until done, then set aside.
3.Bring a large pot of salted water to a boil. Cut the cucumber into thin rounds and cut the avocado in half, discarding the pit and skin. Add the snow peas to the boiling water for 1-2 minutes until tender, but still crisp, then remove and rinse under cold running water.
4.In a separate bowl, whisk the eggs and a pinch of salt together. Heat 1 tablespoon of oil in a non-stick skillet over medium heat and pour in the eggs. Cook, stirring occasionally, for 1-2 minutes until set- then, let the mixture cool before finely slicing the eggs.
5.In a small saucepan, combine soy sauce, mirin, sake, and sugar. Bring to a boil and cook for 2-3 minutes, then set aside to cool.
6.In a clean, non-stick skillet over medium-high heat, cook the shiitake mushrooms for 2-3 minutes on each side until browned. Set aside.
7.In a small bowl, combine the rice vinegar, sugar, and salt. Mix until the sugar is dissolved. Add this to the hot cooked rice and mix well.
8.Assemble the dish: divide the rice evenly among four bowls. Arrange the shrimp, crabmeat, smoked salmon (if using), cucumber, avocado, and snow peas on top of the rice. Top with the sliced eggs, shiitake mushrooms, shredded nori, and sesame seeds. Serve with the dipping sauce on the side, and wasabi if desired.
