Instructions

1.Melt 2 tablespoons of butter in a large skillet over medium heat. Add the sliced mushrooms and sauté until tender and lightly browned. Set aside.
2.In a separate saucepan, melt the remaining 2 tablespoons of butter over medium heat. Whisk in the flour until smooth and cook for 1-2 minutes. Gradually stir in the milk and continue to whisk until the mixture thickens and begins to bubble.
3.Add in 1 cup of the pasta sauce, nutmeg, and salt, stirring to combine. Simmer for 10-15 minutes until the flavors meld together.
4.In a large bowl, mix together the ricotta, fresh basil, 1 cup of mozzarella cheese, and 1/4 cup of grated parmesan cheese.
5.Preheat your oven to 375°F. Spread 1/2 cup of pasta sauce on the bottom of a 9x13 inch baking dish. Lay out 5 lasagna noodles on top, overlapping slightly. Spread 1/3 of the ricotta mixture on top, followed by 1/3 of the mushroom mixture. Repeat these layers twice more, ending with a final layer of lasagna noodles topped with the remaining pasta sauce and grated mozzarella and parmesan cheese on top.
6.Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for another 25-30 minutes until the cheese is melted and bubbly and the lasagna noodles are cooked all the way through. Let rest for 10-15 minutes before serving.
