Ingredients

Dough :
1 cup fine semolina flour
3/4 cup whole wheat flour
1/4 teaspoon ground turmeric
1/8 teaspoon salt
3 tablespoons vegetable oil , divided
3/4 cup water , or as needed
Filling :
3/4 cup raisins
5 dates , pitted
1/2 cup white sugar
1/2 cup shredded coconut
2 tablespoons mixed nuts ( cashews , almonds , walnuts )
1 tablespoon poppy seeds , toasted
1/4 teaspoon freshly ground cardamom , or more to taste
1/4 teaspoon freshly ground nutmeg ( optional )
1/4 cup whole wheat flour
1/4 cup ghee ( clarified butter )

Instructions

1.In a large mixing bowl, combine the semolina flour, whole wheat flour, ground turmeric, salt, and 2 tablespoons of vegetable oil. Mix well.
2.Gradually add water, stirring until you get a smooth, soft dough. Cover and let it rest for 30 mins.
3.In a blender or food processor, combine the raisins, dates, sugar, shredded coconut, mixed nuts, poppy seeds, cardamom, nutmeg, whole wheat flour, and ghee. Process until you have a smooth filling.
4.Divide the dough into equal parts and roll them out into small circles.
5.Place a portion of filling in the center of each circle, then bring the edges together and flatten to form a ball. Roll the ball out into a thin circle.
6.Heat a griddle or a non-stick skillet over medium-high heat. Drizzle a little oil onto the skillet and place the rolled-out Holige onto the skillet. Cook on both sides until golden brown.
7.Serve hot and enjoy!
