Ingredients

2 cups buttermilk
1/2 cup molasses
1/4 cup butter or 1/4 cup margarine
2 teaspoons salt
1 teaspoon fennel seed
1 teaspoon caraway seed
2 tablespoons dry yeast
1/2 cup warm water
1 orange , zest of
1 cup rye flakes ( available in health food stores ) or 1 cup wheat germ
2 cups rye flour
3 1/2 - 4 1/2 cups unbleached white flour or 3 1/2-4 1/2 cups whole wheat flour
1 tablespoon molasses
2 tablespoons water

Instructions

1.In a saucepan, combine buttermilk, molasses, butter, salt, fennel seed, and caraway seed. Heat until lukewarm and butter has melted.
2.In a mixing bowl, dissolve yeast in 1/2 cup warm water.
3.Add lukewarm buttermilk mixture, orange zest, rye flakes or wheat germ, rye flour, and 2 cups white flour or whole wheat flour. Beat vigorously for 2 minutes.
4.Gradually stir in enough additional flour to make a soft dough.
5.Turn the dough out onto a floured surface and knead until smooth and elastic (about 8-10 minutes).
6.Place the dough in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled in bulk.
7.Punch down the dough and shape into 2 round or oblong loaves. Place on greased baking sheet; let rise until doubled in size.
8.Preheat oven to 375°F / 190°C.
9.Combine molasses and water; brush on loaves. Bake for 35-45 minutes. Cool on wire racks.
