Ingredients

1 green pepper , chopped finely
1 red pepper , chopped finely
1 onion , chopped finely
2 tablespoons butter or 2 tablespoons oil
6 eggs
1 tablespoon sour cream ( optional )
1 tablespoon salsa ( optional )
1 cup finely chopped cooked ham , I use honey maple
8 small flour tortillas , use red and green for a Christmas Brunch
1 1/2 cups grated cheddar cheese , divided

Instructions

1.Preheat oven to 350°F.
2.In a large skillet, sauté the green pepper, red pepper, and onion in butter or oil until tender. Set aside.

4.Add ham and the sautéed vegetables. Mix well.
5.In a 9x13 inch baking dish, spread 1/2 cup of the egg mixture.
6.Fill each tortilla with 1/3 cup of egg mixture and roll up.
7.Place the rolled tortillas seam side down in the baking dish.
8.Top with the remaining egg mixture and 1 cup of the cheddar cheese.
9.Bake uncovered for 25 minutes or until heated through.
10.Sprinkle with the remaining cheese and bake until melted, about 5 minutes.
11.Serve hot.
