Ingredients

350 g hokkien noodles
2 teaspoons sesame oil
1 tablespoon shredded ginger
8 shallots , chopped up
6 garlic cloves , chopped up
250 g chinese broccoli ( gai larn ) or 250 g bok choy , chopped
3 tablespoons oyster sauce
2 tablespoons sweet chili sauce
3/4 cup chicken stock
2 eggs
1/2 cup bean sprouts
200 g pork loin , sliced
12 decent sized prawns , shelled , leaving just tail
1 tablespoon chili oil
lime wedge ( to garnish )

Instructions

1.Boil the hokkien noodles and set aside.
2.In a wok, heat the sesame oil, add the shredded ginger, shallots, and garlic, and sauté for 2-3 minutes.
3.Add the Chinese broccoli or bok choy and stir-fry for another 2 minutes.
4.Add the oyster sauce, sweet chili sauce, and chicken stock. Stir everything together well.
5.Beat the eggs and add them to the wok. Scramble the eggs until they are cooked.
6.Add the bean sprouts, pork loin, and prawns. Stir-fry for 2-3 minutes.
7.Drizzle the chili oil over the top, giving everything another good stir.
8.Serve with a lime wedge and enjoy!
