Ingredients

5 lbs stewing chicken
1/2 teaspoon pickling spices
1 tablespoon salt
2 medium onions , peeled , halved
4 carrots , peeled , halved
2 ounces butter
6 tablespoons flour
1/4 cup white wine
salt
pepper
2 egg yolks
4 tablespoons lemon juice
3 hard-boiled eggs , sliced
4 ounces danish ham , sliced thinly
1 pie crust , dough ( premade or your favorite savory crust )
1 egg , beaten with
1 tablespoon water
South African Hoender Pastei, also known as Boer Chicken Pie, is a traditional dish enjoyed by many in South Africa. The combination of chicken, hard-boiled eggs, and Danish ham in a creamy white sauce is a favorite among South African households. Instructions

1.Clean and chop the chicken into small pieces or cubes.
2.Place the chicken in a pot with 10 cups of cold water, pickling spice, and salt.
3.Bring the water to a boil and simmer until the chicken is tender, for about 2 hours.
4.Remove the chicken and set it aside to cool. Skim the fat from the broth and strain. Reserve 4 cups of broth and discard the rest.
5.Cut the carrots into small pieces and boil in salted water until they are soft.
6.Place the onions in a skillet with butter and cook over low heat until they're golden. Add the flour and cook for 3 minutes.
7.Gradually stir in 4 cups of broth. Add the white wine, salt, and pepper and cook until the sauce thickens.
8.Cut cooked chicken meat into small pieces. Mix gently with the egg yolks, lemon juice and 1 cup of the hot sauce.
9.Preheat oven to 375° F.
10.Cut the ham slices into small pieces.
11.Roll out the pastry and line the bottom of a pie plate. Add the chopped chicken and then the sliced hard-boiled eggs and ham. Pour over the sauce.
12.Use the remaining pastry to cover the pie and seal the edges. Brush with beaten egg and water mixture.
13.Bake for 45-60 minutes or until golden brown.
