Ingredients

1 lb ground beef
1 cup chopped onion
1 can chopped green chilies , mild
2 teaspoons chili powder
2 teaspoons ground cumin
1 1/2 teaspoons salt
1/4 cup shaved dark chocolate
1 can black beans , drained
2 teaspoons lemon juice
1 can enchilada sauce
4 cups shredded monterey jack cheese
6 cups tortilla chips

Instructions

1.Preheat oven to 375°F
2.In a large skillet, cook the ground beef and onions until the beef is browned and onions are tender. Drain off excess fat.
3.Add the green chilies, chili powder, cumin, salt, and dark chocolate, stir to combine and cook for 1-2 minutes.
4.Add the drained black beans and lemon juice and cook for an additional 2 minutes.
5.Layer the tortilla chips in the bottom of a 9x13-inch baking dish sprayed with Pam cooking spray.
6.Add about half of the beef mixture on top of the tortilla chips.
7.Pour the enchilada sauce over the beef mixture.
8.Sprinkle 2 cups of shredded Monterey Jack cheese over the top of the sauce.
9.Repeat the layering of tortilla chips, beef mixture, sauce, and cheese.
10.Cover with foil and bake for 20 minutes.
11.Remove the foil and bake for an additional 10 minutes or until the cheese is melted and bubbly.
12.Serve with sour cream, diced tomatoes and chopped fresh cilantro.
