Ingredients

2 tablespoons olive oil
1 large onion , finely chopped
2 garlic cloves , finely chopped
500 g ground lamb
400 g chopped plum tomatoes
2 tablespoons tomato puree
2 teaspoons ground cinnamon
200 g chargrilled aubergines ( in olive oil , drained and chopped )
200 g feta cheese , crumbled
3 tablespoons of fresh mint , chopped

Instructions

1.Preheat oven to 350°F.
2.Heat olive oil in a pan and sauté onion and garlic until translucent.
3.Add ground lamb and cook for 5-7 minutes, or until browned.
4.Add chopped tomatoes, tomato puree and cinnamon.
5.Season with salt and pepper and simmer for 5 minutes.
6.Layer aubergines in the bottom of a baking dish and top with lamb mixture.
7.Sprinkle with crumbled feta cheese and fresh mint.
8.Bake for 30-35 minutes or until the top is golden brown.
