Ingredients

2 cups dashi , preferably homemade
1/2 cup soy sauce
2 tablespoons mirin
2 tablespoons sugar
1 tablespoon dried shrimp ( optional )
1 pinch salt , to taste
300 g somen noodles
2 scallions , trimmed and minced
1 teaspoon wasabi ( optional )
Hiyashi Somen is a cold noodle dish that originated in Japan. It's typically served during the hot summer months to help cool down the body. The dish consists of cold, thin noodles served with a dipping sauce made with soy sauce, mirin, and dashi. The noodles are usually topped with minced scallions and a small amount of wasabi. This dish is light and refreshing and is perfect for a quick lunch or snack on a hot summer day.

Instructions

1.In a small saucepan over medium heat, simmer the dashi, soy sauce, mirin, sugar, dried shrimp (if using), and salt, stirring occasionally, until the sugar dissolves, about 5 minutes.
2.Pour the sauce into a baking dish and let it cool. Then chill it in the refrigerator until very cold.
3.Bring a large pot of salted water to a boil. Add the somen noodles and cook until tender, about 2 minutes. Drain and rinse the noodles under cold running water until cool.
4.Divide the noodles among 4 bowls. Pour the dipping sauce into 4 small bowls. Top each bowl of noodles with the minced scallions and a dollop of wasabi (if using).
5.Dip the noodles in the sauce, slurping them up and enjoying the refreshing, cold noodles on a hot day!
