1 lb small red potato , halved
4 large eggs , hard-cooked , peeled and quartered
1 small cauliflower , stems removed
4 -5 ounces fresh green beans , tipped and halved
1 medium red onion , halved and thin sliced
2 large tomatoes , cut in 1/8th
15 ounces chickpeas , rinsed and drained

Instructions

1.In a small bowl, whisk together the yogurt, lime juice, lime zest, cilantro, mango chutney, curry paste, and water to make the dressing.
2.In a large pot, boil the potato halves until they are fork-tender. Drain and set aside.
3.In the same pot, boil the cauliflower and green beans until they are tender-crisp. Drain and let cool.
4.In a large bowl, combine the onion, tomato, chickpeas, and cooked vegetables. Pour the dressing over the top and toss to coat.
5.Serve the salad topped with the hard-boiled egg quarters.
