Ingredients

1 tablespoon finely ground fenugreek seeds
1 - 1 1/2 liter boiling water
2 garlic cloves
1 large vine ripened tomatoes
2 teaspoons tomato paste
1 pinch caraway seed
1/2 teaspoon cardamom seed ( from about 3-4 pods )
1/2 teaspoon red chili pepper flakes
sea salt
Hilbeh is a traditional spiced fenugreek dip from Yemen that is often served as a condiment with grilled meats and vegetables. Instructions

1.In a small bowl, mix together the ground fenugreek seed and boiling water. Set aside for 2 hours or until the mixture has thickened into a paste.
2.Using a mortar and pestle, grind the garlic, tomato, tomato paste, caraway seed, cardamom seed, red chili pepper flakes, and sea salt into a smooth paste.
3.Add the fenugreek paste to the tomato mixture and stir to combine.
4.Chill for at least 30 minutes before serving.
