Ingredients

1 cup dried hibiscus flowers
2 cups water
1/4 cup olive oil
1 large onion , thinly sliced
2 large carrots , grated
1/2 cup grated jicama
1/4 cup sugar
1/2 teaspoon ground oregano
1/4 teaspoon dried thyme

2 lbs ripe plum tomatoes , cored and halved
1/2 white onion , chopped
3 garlic cloves
2 chipotle chiles in adobo
2 tablespoons vegetable oil
3 bay leaves

12 corn tortillas , 6 inch
1 cup vegan sour cream ( optional )
1 cup purple cabbage , shredded ( optional )
1/2 cup vegan cheese ( optional )

Instructions

1.Preheat oven to 375°F.
2.To prepare the hibiscus flowers, place them and water in a pot over high heat.
3.Bring to a boil then reduce heat and simmer until the flowers are soft and rehydrated, for about 10 minutes.
4.In a separate pan, warm the oil over medium-high heat.
5.Once the oil is hot, add onions and cook until browned and softened, for about 8 minutes.
6.Add the carrots, jicama, and brown sugar and stir, until the sugar has melted for 2 minutes.
7.Add the oregano, thyme, salt, and pepper and stir to combine.
8.Add the tomatoes, onions, garlic, chipotle chiles, vegetable oil, bay leaves, and salt to a blender and blend until smooth.
9.In a pan, heat up the sauce before rolling the tortillas.
10.Heat up a frying pan and cook the tortillas for 10 seconds each.
11.Dip each tortilla in the warm sauce and lay each one flat and fill each tortilla with 2 1/2 tablespoons of the filling.
12.Roll up tortillas and lay them with the seam side down in a baking dish. Repeat with the rest of the tortillas.
13.Cover with remaining sauce and bake for 20-25 minutes or until bubbly and hot.
14.Optionally serve with vegan sour cream, purple cabbage, and vegan cheese.
