2 lbs potatoes ( any type best for fries )
4 cups oil
salt

Instructions

1.Peel and cut the potatoes into chips.
2.Rinse the chips in cold water to remove excess starch.
3.Place the chips in a pan, cover with oil and heat until boiling.
4.Once boiling, reduce heat and cook for 7 minutes, stirring occasionally until the chips are cooked but not golden.
5.Remove the chips from the oil, drain and cool.
6.Heat the oil again and add the chips back in.
7.Cook for another 7 to 8 minutes or until golden brown.
8.Remove the chips from the oil, drain and season with salt to taste.
