Instructions

1.In a bowl, whisk together flour and salt. Gradually add in eggs, milk, and melted butter, whisking until smooth.

3.Heat a non-stick skillet over medium heat. Pour in enough batter to coat the bottom of the skillet in a thin layer.
4.Cook for 1-2 minutes or until the edges start to curl up. Flip the crepe and cook for another 30 seconds.
5.Repeat until all batter is finished.
6.In a saucepan, melt butter over medium heat. Stir in flour until smooth.
7.Gradually whisk in milk. Stir in egg yolk mixture, nutmeg, salt, and white pepper.
8.Cook for 5-7 minutes or until thickened, stirring constantly.
9.Stir in half of the parmesan and gruyere cheese.
10.Add in cooked seafood and stir until heated through.
11.Spoon seafood mixture onto each crepe, roll up, and place in a baking dish.
12.Top with remaining cheese and broil for 1-2 minutes or until cheese is melted and bubbly.
