1 cup part-skim ricotta cheese
1/4 cup blanched almond , toasted
1/2 teaspoon all-purpose flour
1/2 cup chopped of fresh mint
2 tablespoons grated fresh parmesan cheese
2 tablespoons fresh flat leaf parsley
2 tablespoons finely chopped fresh chives
1 tablespoon grated lemon rind
1/2 teaspoon fine sea salt
1/4 teaspoon fresh ground black pepper
1 large egg white
1 garlic clove , chopped
30 wonton wrappers
cooking spray
1 large egg white , lightly beaten
1 can whole tomatoes , drained
1 teaspoon olive oil
2/3 cup chopped onion
2 teaspoons finely grated orange rind
1 teaspoon sugar
1 habanero pepper , finely chopped
2 tablespoons chopped fresh basil

Instructions

1.In a food processor, combine ricotta, almonds, flour, 1/4 cup mint, Parmesan, parsley, chives, lemon rind, salt, pepper, garlic, and 1 egg white.
2.Pulse until mixture is well blended.
3.On a lightly floured surface, lay out 10 wonton wrappers at a time, keeping remaining wrappers covered with a damp towel to prevent drying out.
4.Lightly brush edges of each wrapper with egg white.
5.Spoon 1 tablespoon of cheese mixture into center of the wrapper.
6.Press to seal edges, forming a triangle, being careful to remove any air pockets.
7.Repeat with rest of wrappers and cheese mixture.
8.Preheat oven to 475°F.
9.Cut triangle in half, creating a diamond shape.
10.Arrange stuffed wontons in a single layer on a baking sheet coated with cooking spray.
11.Coat won tons with cooking spray.
12.Bake in preheated oven for 6 to 8 minutes or until golden.
13.In a small saucepan, heat olive oil over medium heat.
14.Add onion, orange rind, sugar, and habanero.
15.Cook for 2 minutes, stirring occasionally.
16.Add tomatoes and basil.
17.Reduce heat to low and simmer for 5 minutes, stirring occasionally.
