1 pound Yukon Gold potatoes
1/4 cup chopped parsley
1/4 cup chopped green onions
1 teaspoon finely chopped fresh rosemary or dill
1/2 teaspoon pepper
1/4 teaspoon salt
1/2 cup Gay Lea Sour Cream
1 1/2 teaspoons Dijon mustard
Herbed potato rosti is a traditional Swiss dish made of grated potatoes that are fried until crispy. However, this recipe features a twist on the classic pancake by incorporating fragrant herbs such as parsley, green onions, and rosemary or dill, making it a perfect breakfast or brunch dish that is easy to make and delightfully delicious. Instructions

1.Grate the potatoes and place them into a large bowl.
2.Add chopped parsley, green onions, rosemary (or dill), pepper, and salt to the bowl. Mix all the ingredients.
3.Heat the skillet over medium heat and add vegetable oil.
4.Place 1/4 cup mixture for each rosti onto the hot skillet. Press the mixture to make flat mini pancakes.
5.Fry the rosti, frequently turning them, until they are golden brown and crisp on both sides.
6.Combine the sour cream and dijon mustard in a small bowl.
7.Add on top of the pancakes and serve hot.
