2 tablespoons tomato paste

1/8 teaspoon cayenne ( to taste )
3/4 cup peeled peeled seeded and diced fresh tomato

Instructions

1.In a large skillet, heat the oil over medium-high heat. Add the bell pepper and garlic and cook until softened, about 3 minutes.
2.In a medium bowl, mix the ricotta, parmesan cheese and 2 tablespoons of chicken broth until well combined.
3.In another bowl, whisk together the flour, salt and herbs. Whisk in the remaining chicken broth, eggs and melted butter until smooth.
4.Cover and refrigerate the batter for 30 minutes.
5.Heat a nonstick skillet over medium-high heat. Brush the skillet with melted butter. Pour about ¼ cup of batter into the skillet, swirling the pan to spread the batter evenly. Cook until the edges of the crepe begin to brown and the top is set, about 1 minute. Carefully flip and cook until the other side is lightly browned, about 30 seconds. Repeat with the remaining batter, brushing the skillet with melted butter as needed.
6.Preheat oven to 375°F.
7.To make the tomato sauce, combine the can of tomatoes, tomato paste, 1 cup of chicken broth, brown sugar, dried basil and cayenne in a blender and puree until smooth.
8.Pour the tomato sauce and diced fresh tomatoes into a baking dish and stir to combine.
9.Place a spoonful of ricotta mixture into the center of each crepe. Roll the crepe up around the filling and place seam-side down in the baking dish with the tomato sauce.
10.Cover with foil and bake for 20 minutes. Uncover and bake for an additional 5-7 minutes, until the crepes are hot and the cheese is melted and lightly browned.
