Ingredients

800 g beef , cubed
3 onions , cut into wedges
3 carrots , sliced
4 stalks celery , sliced
1 can chopped tomato
2 tablespoons fresh basil
2 tablespoons fresh flat leaf parsley
2 tablespoons fresh rosemary
2 -3 cloves garlic , minced
3 bay leaves
3 red capsicums , any colour , roasted , skinned and chopped
1 bunch baby spinach leaves
2 tablespoons oil
2 tablespoons flour
1 cup beef stock
1/2 cup red wine ( Shiraz was my preference , but any decent red will suffice )

Instructions

1.Heat oil in a large heavy-based pot over high heat.
2.Dredge the beef in flour, shaking off excess, and cook in batches until well browned on all sides.
3.Set beef aside, reduce heat to medium, and add onions to the same pot, cook until tender.
4.Add garlic, celery, and carrots and continue cooking for another 5 minutes.
5.Increase heat to high, add beef stock, red wine, and canned tomato and bring to a boil.
6.Return beef to the pot, add in fresh herbs, bay leaves and roasted capsicums and cook over low heat for 2 hours.
7.Add spinach and continue cooking until it has wilted.
8.Remove bay leaves and serve hot.
