8 lbs prime rib roast
1/4 cup Dijon mustard
1 tablespoon vegetable oil
2 teaspoons dried leaf thyme
2 teaspoons fresh coarse ground black pepper
1/2 teaspoon dried rosemary , crumbled
1/2 teaspoon salt , preferable coarse

Instructions

9.Remove the roast from the oven and let it rest for 15-20 minutes before slicing and serving.
