Ingredients

3 -4 tablespoons olive oil
2 large onions , sliced thinly
2 lbs pork loin , chopped in 1 inch cubes
1 dash lemon juice
garlic powder
1 dill pickle , cut very tiny ( relish size )
1 carrot , shredded
3 -4 cups hot water
2 teaspoons chicken bouillon granules or 2 chicken bouillon cubes
2 -3 tablespoons sweet Hungarian paprika
1 -2 teaspoon cajun seasoning
salt & freshly ground black pepper
4 medium potatoes , cut in cubes
1 -2 tablespoon flour
2 -4 tablespoons cold water ( shake in a container to remove lumps )

Instructions

1.Heat olive oil in a large pot over medium-high heat
2.Add onions and saute for 3 minutes until they soften
3.Season pork cubes with salt, pepper, garlic powder, and cajun seasoning

5.Add the carrot, dill pickle, and hot water to the pot
6.Add chicken bouillon granules, sweet Hungarian paprika and salt to taste
7.Reduce the heat to low and let the stew simmer for 1-2 hours until the meat is tender
8.Add potato cubes and let them cook until they are soft
9.In a separate bowl, mix flour and cold water, whisk until smooth to create a slurry
10.Slowly pour the slurry into the soup to thicken it, stirring constantly
11.Remove the pot from heat and let sit for 10 minutes before serving
