Ingredients

3 tablespoons olive oil
1 small French bread , cut into slices
kosher salt
2 heirloom tomatoes , cut in wedges
1 pint red pear tomatoes or 1 pint cherry tomatoes , halved
1 cucumber , unpeeled , seeded , and sliced 1/2-inch thick
1 red bell pepper , seeded and cut into 1-inch cubes
1 yellow bell pepper , seeded and cut into 1-inch cubes
1/2 red onion , cut in half and thinly sliced
20 basil leaves , coarsely chopped
3 tablespoons capers , drained
1 teaspoon finely minced garlic
1/2 teaspoon Dijon mustard
3 tablespoons champagne vinegar
1/2 cup olive oil
1/2 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper

Instructions

1.Preheat the oven to 375 degrees F
2.Brush the bread slices with olive oil and sprinkle with kosher salt. Bake for 14 to 16 minutes, or until lightly browned. Cool.
3.In a large bowl, combine the heirloom tomatoes, red pear tomatoes or cherry tomatoes, cucumber, red and yellow bell peppers, and red onion.
4.In a small bowl, whisk together the garlic, mustard, vinegar, 1/2 teaspoon salt, and the pepper. While whisking, slowly add 1/2 cup of olive oil until emulsified.
5.Pour the dressing over the vegetables. Add the basil and capers and toss together.
6.Cut the bread in large croutons and add to the salad. Allow the salad to sit for about 30 minutes to allow the bread to soak up the dressing. Serve at room temperature.
