3 heirloom tomatoes
1/2 teaspoon borsari salt
1/2 teaspoon blackened cajun spices
1 poblano pepper ( optional )
6 small potatoes ( optional )
1 cup leafy greens ( optional )

Instructions

1.Preheat your oven to 400°F.
2.Roast the poblano pepper and potatoes for 15 minutes
3.Take out the poblano pepper and leave the potatoes for another 10 minutes.
4.Sauté the fish fillets with Cajun spices and borsari salt for 1-2 mins on medium heat.
5.Blend the roasted poblano pepper and 2 tomatoes in a blender and pour them in a pot. Cook for a minute or two.
6.Add the potatoes, remaining chopped tomatoes, leafy greens, and cooked fish to the pot.
7.Simmer until everything is cooked and the flavors are well combined.
8.Serve hot with crusty bread.
