6 garlic cloves

3 fresh basil leaves
4 cups water
1 tablespoon salt

4 tablespoons butter
1/4 cup parmesan cheese
2 cups half-and-half

Instructions

1.Preheat oven to 400F and line a baking sheet with parchment paper
2.Roughly chop the onions and garlic and place in the baking sheet along with the tomatoes

4.Roast vegetables for 30-40 minutes until softened and slightly charred
5.Remove vegetables from oven and transfer them to a blender and blend until smooth

8.Cook for 10-15 minutes until the soup is thick and heated through
