1 cup raisins
1 cup water
1/2 cup butter or 1/2 cup margarine
1/4 cup sugar
2 large eggs
1 1/2 cups unbleached flour , Sifted
1 teaspoon baking powder

Instructions

1.Preheat oven to 375°F.
2.In a small saucepan, cook raisins and water over low heat until raisins are plump and water is absorbed (about 15 minutes).
3.Remove from heat and stir in butter or margarine; let cool.
4.In a large mixing bowl, beat sugar and eggs until light.
5.Alternately, add sifted flour and cooled raisin mixture, blending well.
6.Stir in baking powder.
7.Grease muffin cups or use paper muffin cups.
8.Fill cups two-thirds full of batter.
9.Bake for 20 to 25 minutes or until muffins are lightly browned.
