Ingredients

2 eggs
2 cups milk , scalded , then cooled ( should amount to a total of two cups when cooled )
1/4 cup sugar
1 tablespoon active dry yeast
5 -6 cups unbleached all-purpose flour
1/2 cup butter , at room temperature
1 teaspoon salt
1 lemon , zest of
1/2 - 1 cup golden raisin
1 egg , beaten with 1 tablespoon water
sliced almonds

Instructions

1.In a large mixing bowl, whisk together the eggs, scalded milk, and sugar until smooth.
2.Sprinkle active dry yeast over the liquid mixture and stir well.
3.Add 5 cups of flour, butter, salt, and lemon zest to the bowl and mix well.
4.If the dough is too sticky, add more flour, 1/4 cup at a time, until a soft, pliable dough forms.
5.Knead the dough by hand for 10 minutes or use a stand mixer with a dough hook attachment.
6.Place the dough in a greased bowl and cover with a towel.
7.Let it rise for 1 hour in a warm place until the dough has doubled in size.
8.Preheat the oven to 350°F.
9.Punch the dough down and work in the golden raisins.
10.Divide the dough in half and shape each half into a long rope.
11.Twist the dough ropes together to form a wreath shape.
12.Transfer the wreath to a baking sheet.
13.Brush the beaten egg mixture over the surface of the wreath and sprinkle with sliced almonds.
14.Bake for 30–35 minutes.
