1 cup rice ( I prefer to use Basmati )
1 1/2 cups good quality chicken broth
1/4 cup chickpeas
1/2 teaspoon dried oregano
1/2 teaspoon all purpose Greek seasoning
1/4 teaspoon cumin

Instructions

1.Rinse rice and drain thoroughly.
2.Heat oil in a pan and sauté minced garlic cloves until fragrant over medium heat.
3.Add rice and stir for a minute.
4.Add chicken broth, chickpeas, dried oregano, Greek seasoning, and cumin. Stir the ingredients and bring to a boil over high heat.
5.Reduce heat to low, cover the pan and simmer for about 18-20 minutes, or until the liquid is absorbed and the rice is fully cooked.
6.Stir again and serve hot.
