Ingredients

6 egg yolks
3/4 cup white sugar
2/3 cup milk

1/2 cup strong brewed coffee , room temperature
2 tablespoons rum
6 ounces french-style ladyfinger cookies
1 tablespoon unsweetened cocoa powder

Instructions

1.Whisk the egg yolks and sugar together in a bowl and mix well.
2.Add milk to a saucepan and heat over medium heat until you see steam rising from the surface. Do not let it boil.
3.Pour the heated milk over the egg mixture, whisking continuously.
4.Pour the combined mixture back into the saucepan and cook over low heat, stirring constantly, until the mixture thickens and coats the back of a spoon. Do not let it boil.
5.In a large mixing bowl, beat the heavy cream and vanilla extract together until stiff peaks form. Add the mascarpone cheese and whisk until combined.
6.In a separate bowl, mix the coffee and rum together.
7.Dip the ladyfinger cookies in the coffee mixture and layer them in the bottom of an 8x8 inch dish. Pour half of the mascarpone mixture over the cookies. Repeat the layering, ending with mascarpone mixture on top.
8.Sift cocoa powder over the top and refrigerate for at least 2-3 hours, or overnight. Serve chilled.
