Ingredients

6 chicken thighs
6 chicken drumsticks
2 tablespoons salt
1 quart cold water , to cover
2 cups cold buttermilk
1 egg , beaten
1 teaspoon chicken seasoning mix ( see note )
3 cups all-purpose flour
2 tablespoons chicken seasoning mix ( see note )
2 quarts vegetable oil for frying

Instructions

1.Season the chicken with salt and leave it in the fridge for at least 4 hours, or overnight.

4.Heat the vegetable oil in a large pot to 350°F (175°C).
5.Dip each chicken piece in the buttermilk mixture, then coat it in the flour mixture.
6.Fry the chicken in batches, starting with the thighs, for 15-20 minutes or until golden brown and cooked through.
7.Remove the chicken from the pot and place it on paper towels to drain the excess oil.
