Ingredients

2 tablespoons vegetable oil
1 lb boneless beef roast , trim excess fat
1 lb boneless pork roast , trim excess fat
salt
fresh ground black pepper
1/4 cup red wine
2 medium onions , quartered
4 peeled garlic cloves
1 medium fresh hot pepper , quartered
water , to cover
1 whole chickens , cut into 8 pieces ( pick of the chick works well )
2 cups chopped onions
2 cups chopped carrots
1 cup chopped celery
1 cup medium diced bell pepper
1 lb russet potato , peeled and diced
2 cups peeled seeded and chopped tomatoes
1/2 lb fresh green beans , strings removed and cut into 2 inch pieces
2 cups fresh corn kernels ( about 4 ears )

Instructions

1.Heat oil in a large cast-iron Dutch oven or heavy metal pot over high heat.
2.Season beef and pork with salt and black pepper.
3.Sear it in the pot on all sides, until brown.
4.Add red wine, onions, garlic, and hot pepper to the pot and cook until the onions are translucent.
5.Cover meat with water and bring to a boil, reduce the heat to a simmer.
6.Cover the pot and let simmer for about 1 hour or until the meat is tender.
7.Remove meat from the pot and set aside.
8.Add chicken, onions, carrots, celery, bell pepper, and potatoes to the pot.
9.Return the beef and pork back to the pot and add in tomatoes.
10.Cover the pot and simmer gently for another hour until chicken and vegetables are cooked through.
11.Add green beans and corn kernels to the pot and cook for another 15 minutes.
12.Season with spice essence to taste.
