1 1/3 quarts water , divided
2/3 cup uncooked long grain white rice
1 tablespoon vegetable oil
1 pound ground beef

3 tablespoons Italian bread crumbs

1 quart tomato sauce

Instructions

1.Rinse the lentils under cold water and drain.

3.In a separate pot, bring 1 1/3 quarts of water to a boil and add the rice. Reduce heat and cover, simmering for 18 to 20 minutes, or until the rice is tender and fluffy.
4.In a large skillet, heat the vegetable oil over medium heat. Add the ground beef and cook, stirring occasionally, until browned. Drain off any excess fat.
5.Combine the cooked lentils, cooked rice, and ground beef in the pot with the lentils.
6.Add the beaten egg, minced garlic, grated Parmesan cheese, chopped parsley, bread crumbs, salt, and black pepper. Mix well.
7.Pour the tomato sauce into the pot and stir to combine.
8.Simmer the soup for an additional 20 to 25 minutes, or until heated through and the flavors have melded together.
