Ingredients

1 lb ground sirloin
3/4 cup diced onion
3 large garlic cloves , finely chopped
1 cup diced red pepper
1 cup diced Japanese eggplant
1 cup diced zucchini
1 cup fresh corn kernels , removed from the cob
3 tablespoons fresh basil , coarse chopped
1 1/2 teaspoons fresh oregano , finely chopped
1 1/2 cups grape tomatoes , halved
1 1/2 cups grated romano-pecorino cheese , divided
12 ounces Pillsbury Grands refrigerated buttermilk biscuits
1/2 cup hearty red wine
3 tablespoons extra virgin olive oil
2 tablespoons melted unsalted butter
1 tablespoon garlic powder
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
1/2 teaspoon red pepper flakes , if desired for a little heat ( or more )
2 cups tomato and basil pasta sauce ( store bought )

Instructions

1.Preheat oven to 400°F.
2.In a large skillet, heat olive oil over medium-high heat. Add ground sirloin and cook, stirring occasionally, until browned and crumbly, about 8 minutes.
3.Add onions and garlic to the skillet and cook until softened, about 5 minutes.
4.Add red pepper, eggplant, zucchini, corn, basil, and oregano to the skillet. Cook for 5 minutes until vegetables are slightly tender.
5.Add tomatoes, pasta sauce, red wine, butter, garlic powder, salt, pepper, and red pepper flakes to the skillet and cook for another 5 minutes.
6.While the sauce is cooking, grease a 9×13 inch baking dish with nonstick cooking spray. Cut the buttermilk biscuits into quarters and place them in the greased dish.
7.Once the sauce is done cooking, pour it over the biscuits in the baking dish. Sprinkle the grated Romano-Pecorino cheese over the top.
8.Cover the dish with Reynolds Wrap Foil and bake for 20 minutes.
9.Remove foil from the dish and bake for an additional 10 minutes until the biscuits are golden brown.
10.Let the dish cool for a few minutes before serving.
