Ingredients

3 lebanese flat bread
olive oil flavored cooking spray
1 tablespoon olive oil
1 brown onion , finely chopped
400 g beef mince , extra trim
1 cup zucchini
1 cup carrot , grated
1/4 cup tomato paste
2 tablespoons water
3/4 cup red kidney beans , drained
3/4 cup tasty cheese , grated
1/3 cup light sour cream
Hearty Beef Nanchos is a Tex-Mex dish that is perfect for a cozy night in or a casual dinner party with friends and family. The dish is made up of browned beef mince mixed with grated vegetables, tomato paste, and canned kidney beans. It is then served over crisped lebanese flatbread triangles and topped with grated cheese and dollops of sour cream. Instructions

1.Preheat oven to 220°C fan-forced. Line a large baking tray (40cm x 30cm) with baking paper.
2.Cut each flatbread into 8 triangles and place on to the prepared tray. Spray with cooking spray and bake in oven for 5-7 minutes or until golden and crisp. Remove from oven and set aside.
3.Heat oil in a large frying pan over high heat. Add onion and cook, stirring occasionally until soft. Add beef mince and cook, stirring with a wooden spoon and breaking up any lumps until browned.
4.Add zucchini, carrot, tomato paste and water. Cook for 5-7 minutes or until vegetables are soft and liquid is absorbed. Stir in kidney beans.
5.Arrange the crisped flatbread triangles on a serving platter. Spoon over the beef mixture and sprinkle with cheese. Serve with dollops of sour cream.
