1 teaspoon kosher salt or 1 teaspoon sea salt
1/2 cup shredded low-fat cheddar cheese or 1/2 cup colby cheese
1/2 cup shredded asiago cheese
32 inches whole wheat tortillas
6 ounces canned pink salmon , flaked

Instructions

1.Heat oil in a large nonstick skillet over medium-high heat.
2.Add kale and 1/4 teaspoon salt; cook, stirring frequently, until wilted, about 2-3 minutes.
3.Transfer to a bowl and stir in cheddar and asiago.
4.Wipe out the pan and place over medium heat.
5.Place one tortilla in the pan and sprinkle evenly with cheese mixture and salmon.
6.Top with another tortilla.
7.Cook until lightly browned on the underside, about 2 minutes.
8.Flip over using a large spatula and cook until the second side is golden brown and the cheese is melted, about 1-2 more minutes.
