Ingredients

4 medium baking potatoes
1/3 1/3 cup nonfat plain yogurt or 1/3 cup low-fat plain yogurt
2 tablespoons chopped fresh herbs ( basil , chives , thyme , marjoram , oregano , parsley , etc . any combination )
2 tablespoons grated parmesan cheese
skim milk ( optional )
1/4 cup shredded nonfat mozzarella cheese or 1/4 cup part-skim mozzarella cheese

Instructions

1.Preheat oven to 375°F (190°C).
2.Scrub and dry the potatoes.
3.Using a fork, poke the potatoes a few times to create holes for the steam to escape.
4.Bake the potatoes directly on the oven rack for approximately 45-60 minutes, until tender and cooked through.
5.While the potatoes are baking, mix nonfat plain yogurt, fresh herbs, and grated Parmesan cheese in a small bowl.
6.After the potatoes are done, remove them from Oven.
7.Cut a small slit in the top of each potato and use a fork to fluff up the middle slightly.
8.Add a dollop of the herby yogurt mixture to each potato, then top each with shredded mozzarella cheese.
9.Bake for an additional 5-10 minutes, until cheese is melted and bubbly.
10.Serve hot.
