Reynolds Wrap Foil
1 1/4 lbs lean ground turkey
8 slices turkey bacon , chopped
16 cherry tomatoes , cut into quarters
1/2 red bell pepper , ribs and seeds removed
3/4 cup fresh corn ( previously roasted or boiled . frozen is ok , too )
8 ounces fat free cream cheese
16 ounces low-fat monterey jack cheese
16 ounces black beans
4 98 % fat free tortillas
6 ounces salsa verde ( only 1/4-1/2 cup is needed ) or 6 ounces green enchilada sauce ( only 1/4-1/2 cup is needed )
1 package sazon con azafran seasoning
1 teaspoon garlic powder
1 teaspoon salt ( or to taste )
1 teaspoon black pepper
1/2 teaspoon black pepper
2 teaspoons cumin
1/2 - 1 teaspoon cayenne pepper ( or flakes )
10 sprigs fresh cilantro , chopped or 1 tablespoon dried cilantro
1/2 cup water

This healthy southwest lasagna puts a Mexican-inspired twist on traditional lasagna. With lean ground turkey, black beans, vegetables, and low-fat cheese, this dish is packed with protein and flavor. The fat-free cream cheese layer adds creaminess without all the calories, making this a healthier alternative to traditional lasagna recipes. Instructions

1.Preheat oven to 375 degrees F. Line a 9 x 13 inch baking dish with Reynolds Wrap Foil and spray lightly with cooking spray.
2.In a large skillet, cook the ground turkey until browned and cooked through. Using a slotted spoon, transfer the cooked turkey to a large bowl.
3.In the same skillet, cook the chopped turkey bacon until brown and crispy. Add to the turkey in the bowl.
4.Add the quartered cherry tomatoes, chopped red bell pepper, fresh corn, and black beans to the bowl.
5.Add the sazon con azafran seasoning, garlic powder, salt, black pepper, cumin, and cayenne pepper to the bowl. Mix all ingredients together well.
6.In a separate bowl, beat the fat-free cream cheese until smooth. Gradually add in 1/2 cup water and stir until well combined and smooth. Add this mixture to the turkey and vegetable mixture in the large bowl and mix well.
7.Layer 2 tortillas in the bottom of the prepared baking dish. Spoon 1/3 of the turkey mixture evenly over the tortillas. Repeat layers two more times, ending with the remaining 2 tortillas on top.
8.Pour 1/4-1/2 cup salsa verde or green enchilada sauce on top of the lasagna.
9.Finally, sprinkle the grated low-fat Monterey jack cheese over the top of the lasagna. Cover the dish with foil and bake for 35-40 minutes or until cheese is melted and bubbly and the lasagna is heated through. Let sit for 10 minutes before slicing and serving.
