Instructions

1.Mix the ground flax seeds and hot coffee together in a bowl and set aside to cool for 5 minutes.
2.Preheat the oven to 350°F (175°C) and line an 8 inch square baking pan with parchment paper.
3.In a large bowl, mix the coconut oil, demerara sugar, and sea salt until creamy.
4.Stir in the cooled coffee mixture, molasses, and vanilla until combined.
5.In a separate bowl, whisk together the whole wheat flour, cornstarch, baking powder, cinnamon, clove, nutmeg, allspice, ground ginger, and ground cardamom.
6.Add the dry ingredients to the wet ingredients and stir until just combined.
7.Fold in the soaked raisins, chopped walnuts, and chopped almonds.
8.Spread the mixture evenly into the prepared baking pan.
9.Bake for 25-30 minutes, or until golden brown and firm to the touch.
10.Let cool completely before cutting into bars.
