Ingredients

200 g lambs kidneys , halved
1 tablespoon rapeseed oil
2 medium onions , chopped
2 bay leaves
4 fresh thyme sprigs
600 g lean stewing steaks , cut into chunks
100 ml red wine
2 teaspoons tomato puree
1 teaspoon English mustard powder
2 tablespoons plain flour
1 large carrot , chopped
4 flat mushrooms , quartered , halved if small
3 tablespoons chopped parsley
140 g plain flour , plus extra for dusting
1 teaspoon thyme leaves ( optional )
25 g very cold butter ( or frozen )
4 tablespoons 2 % fat Greek yogurt
2 tablespoons extra-virgin olive oil
This flavor-packed steak and kidney pie is the ultimate comfort food. Not only is it delicious, but it is also packed full of healthy ingredients such as lean beef, kidney, and plenty of vegetables. To make this recipe even healthier, use whole-grain flour instead of plain flour, and swap out the pastry crust for a potato topping. Instructions

1.Preheat the oven to 350°F (180°C).
2.Heat the rapeseed oil in a large cast-iron skillet over medium heat.
3.Add the onions, bay leaves, and thyme to the skillet and cook until onions are soft and translucent (around 10 minutes).
4.Add the chopped steaks and kidney to the skillet. Cook until meat is browned on all sides (5-7 minutes).
5.Add the red wine, tomato puree, mustard powder, and plain flour to the skillet. Stir well to combine, then add the chopped carrots and mushrooms.
6.Cook over medium heat, stirring occasionally, until the sauce thickens (around 5-7 minutes).
7.Remove the skillet from heat, then stir in the chopped parsley.
8.To make the crust, put the plain flour, thyme leaves, and very cold butter in a mixing bowl. Rub the ingredients together with your fingers until they form a coarse crumbly mixture.
9.Add the Greek yogurt and olive oil to the mixture, then stir until a firm dough forms.
10.Roll out the dough on a floured surface until it is around 0.5 cm thick.
11.Place the pie filling in a baking dish, then lay the rolled-out dough over the top of the filling.
12.Use a sharp knife to cut a few slits in the top of the crust, then place the dish in the preheated oven for around 45-50 minutes, or until the crust is golden-brown and the filling is cooked through.
