Ingredients

18 1/4 ounces dark fudge cake mix ( Duncan Hines is what I used )
3 eggs
1/2 cup vegetable oil
1 1/3 cups water
1 cup about 4 1/2-ounces hazelnuts , toasted and skinned
2/3 cup sugar
1/3 cup water
16 ounces mascarpone cheese , room temperature
1 cup cream
3/4 cup powdered sugar
1 teaspoon vanilla extract
1/4 cup bittersweet chocolate chips
1 tablespoon sugar
1 teaspoon orange zest

Instructions

1.Preheat oven to 350°F.
2.Grease two 9-inch cake pans.
3.In a large mixing bowl, combine cake mix, eggs, oil, and water. Mix until fully combined.
4.Pour mixture evenly into the cake pans.
5.Roast hazelnuts on a pan by placing them in the oven before it preheats to 350°F. Cook for 10-12 minutes and remove them from the oven. Move the hazelnuts to a kitchen towel and rub them to remove any loose skin.
6.Place hazelnuts in a food processor and pulse until ground. Combine sugar and water in a pot and stir over medium heat until sugar dissolves. Bring to a boil and add hazelnuts. Cook for 8-10 minutes on medium heat or until the mixture turns golden. Turn off heat and let it cool for a bit.
7.Whip mascarpone cheese, cream, powdered sugar, and vanilla in a separate bowl until fully combined and thick.
8.Place one cake layer on the serving plate and spread hazelnut mixture evenly over it. Top with the second cake layer. Cover the entire cake with mascarpone frosting. Melt chocolate chips in a microwave for 30 seconds. Combine orange zest, sugar, and melted chocolate in a bowl to make a crunch topping. Sprinkle the topping onto the cake.
9.Chill for at least 2 hours before serving.
