Ingredients

1/4 cup walnuts
1/4 cup hazelnuts , blanched
2 cups whole milk
1/4 teaspoon nutmeg , ground
1 pinch allspice , ground
1 pinch five-color peppercorn , freshly ground
1/4 cup honey , plus
2 tablespoons honey
1 pinch salt
3 large eggs
1 large egg white
3 tablespoons Frangelico , nut liqueur or 3 tablespoons Amaretto

Instructions

1.Preheat the oven to 325°F (165°C).
2.Place the walnuts and hazelnuts in a food processor and chop them into small pieces.
3.In a medium saucepan, heat the milk, nutmeg, allspice, peppercorn, honey, and salt over medium heat until just boiling. Remove from the heat and let it cool.
4.In a large bowl, whisk together the eggs, egg white, and Frangelico or Amaretto. Slowly add the cooled milk mixture and whisk until well combined.
5.Divide the nut mixture between 6 (6-ounce) ramekins. Pour the custard mixture over the nuts.
6.Arrange the ramekins in a baking dish with high sides. Fill the dish with hot water so it comes up 1 inch on the sides of the ramekins.
7.Bake for 35 to 40 minutes, or until the custards are set.
8.Remove the ramekins from the water bath and let them cool for 20 minutes. Place the ramekins in the refrigerator and chill for at least 2 hours or overnight. Serve chilled.
