Instructions

.In a saucepan over medium heat, stir together the sugar, water, white wine vinegar, and honey until the sugar dissolves.
.Bring the mixture to a boil, stirring occasionally, then reduce the heat to low and simmer until the mixture thickens and reduces by half, about 30 minutes.
.Add the mango to the saucepan and stir to coat. Cook for 10 minutes, then remove from heat and set aside.
.In a separate saucepan over medium heat, heat the olive oil and add the shallot and ginger. Cook until the shallot is tender, about 3 minutes.
.Add the Arborio rice to the saucepan and stir to coat with the oil mixture. Cook, stirring constantly, until the rice turns opaque, about 2 minutes.
.Add 1/2 cup of the chicken broth to the saucepan and stir until the liquid is absorbed. Continue adding chicken broth, 1/2 cup at a time, stirring constantly and allowing each addition to be absorbed before adding the next.
.Stir in the coconut milk and white wine, and cook until the rice is tender and the risotto is creamy, about 18 minutes.
.Stir in the shredded spinach, Parmesan cheese, and mango mixture, and cook until heated through.
.Serve the risotto topped with watermelon slices.
