Ingredients

1 lb ground pork or 1 lb ground chicken
1 cup diced onion
2 large carrots , shredded ( or 3 medium carrots )
1/2 lb raw shrimp , deveined and chopped
1 1/2 tablespoons fish sauce
1 teaspoon chicken bouillon powder
1 tablespoon sugar
1 tablespoon sesame oil ( optional )
1/2 teaspoon black pepper
4 -5 garlic cloves , minced
1 cup bean thread noodles , soaked in water and cut into 1 inch lengths
1 egg , separated
50 small egg roll wraps
oil ( for deep frying )

Instructions

1.In a large bowl, mix together the ground pork or chicken, diced onion, shredded carrots, chopped shrimp, fish sauce, chicken bouillon powder, sugar, sesame oil (optional), black pepper, minced garlic, and bean thread noodles.
2.Beat the egg white in a small bowl and set aside.
3.Lay an egg roll wrapper out on a clean surface with one corner pointing towards you.
4.Spoon 2-3 tablespoons of the filling mixture onto the wrapper and spread it towards the corner closest to you.
5.Begin rolling the wrapper tightly around the filling, tucking in the sides as you go.
6.When you reach the corner opposite the one you started with, brush a little of the beaten egg white onto the wrapper to help it seal.
7.Repeat with the remaining ingredients.
8.Preheat the oil in a deep fryer or large pot to 350°F.
9.Carefully add the spring rolls to the oil and fry for 2-3 minutes on each side, or until golden brown.
10.Remove the spring rolls from the oil and place them on a paper towel-lined plate to drain excess oil before serving.
