1 cup dried garbanzo beans , soaked overnight
8 cups water

1/2 cup fresh coriander , leaf chopped finely
1/2 cup fresh flat leaf parsley , chopped finely
2 teaspoons salt
1 teaspoon fresh black pepper
1 lemon , juiced
1 teaspoon sweet paprika
1 teaspoon ground turmeric

Instructions

1.Rinse the soaked chickpeas and add them to a large pot with the water. Bring to a boil over high heat, then reduce to medium-low and simmer for about 45 minutes.
2.In a separate skillet or frying pan, heat the vegetable oil over medium heat. Add the onions, tomatoes (optional), garlic, and hot pepper. Cook until the onions are soft and translucent, about 10 minutes.
3.Add the onion mixture to the pot with the chickpeas. Add the coriander, parsley, salt, black pepper, lemon juice, sweet paprika, and turmeric. Simmer for an additional 20 minutes.
4.Remove from heat and serve hot.
