5 large eggs , at room temperature
3/4 cup packed light brown sugar
6 egg yolks ( including the 2 reserved )
1/4 cup granulated sugar
2/3 cup white sweet dessert wine , such as Muscat or 2/3 cup ice wine

Instructions

1.Preheat the oven to 350°F.

3.Add the apple, lemon zest, cinnamon, ginger, salt, and dessert wine. Pulse until the apple is finely chopped, scraping down the sides of the food processor as needed.
4.Beat the eggs and brown sugar in a large mixing bowl with an electric mixer until the mixture thickens and becomes pale yellow, about 3 minutes. Scrape the apple mixture onto the egg mixture. Use a rubber spatula to gently fold the apple mixture into the egg mixture.
5.In a medium-sized mixing bowl, whisk the egg yolks and granulated sugar until the mixture thickens and becomes pale yellow, about 3 minutes. Stir in the dessert wine. Use a rubber spatula to fold the yolk mixture into the egg mixture.
6.Pour the mixture into a 9-inch springform pan. Bake for 45 to 50 minutes, or until the cake is set and golden brown. A toothpick inserted in the center of the cake should come out clean.
7.While the cake is cooking, prepare the zabaglione sauce: Fill a medium-sized saucepan with 1 inch of water and bring it to a boil. Reduce the heat so the water simmers gently. In a large mixing bowl, whisk the egg yolks and sugar until the mixture thickens and becomes pale yellow, about 2 minutes. Whisk in the dessert wine. Put the mixing bowl over the saucepan of simmering water, taking care that the bottom of the bowl does not touch the water. Whisk the mixture constantly until it thickens and becomes foamy, about 5 minutes. Remove the bowl from the heat and continue whisking the sauce until it is cool. Cover and refrigerate the sauce until you are ready to use it.
8.Serve the cake warm or at room temperature with the zabaglione sauce.
