Ingredients

8 large eggplants
8 large potatoes
8 green bell peppers
8 large onions
8 summer squash
6 tomatoes
1 pound fresh green beans
1 pound whole fresh mushrooms
2 bulbs garlic , cloves separated and peeled
1/4 cup chopped fresh dill weed
1/4 cup chopped fresh oregano
1/4 cup chopped fresh basil
1 can tomato sauce
3/4 cup olive oil
salt and pepper to taste

Instructions

1.Preheat oven to 375 degrees F (190 degrees C).
2.Slice eggplants into 1/4 inch rounds and place in a pot of salted water. Let stand for 1 hour to remove bitterness.
3.Cut potatoes into 1/4 inch slices and green peppers into large chunks.
4.Put onion slices, eggplant slices, potato slices, squash slices, and green pepper chunks into a large casserole dish.
5.Chop tomatoes and mushrooms and add to the casserole dish.
6.Trim the ends off the green beans and add them to the dish.
7.Crush garlic cloves and mix with dill weed, oregano and basil. Sprinkle over vegetables in the dish.
8.Pour tomato sauce and olive oil over the top of the vegetables, and season with salt and pepper.
9.Cover the dish with aluminum foil and bake for 1 hour. Remove the foil and bake for an additional 30 minutes.
