Ingredients

2 cups dried garbanzo beans , soaked overnight
1/2 cup dry lentils , brown ( I have never tried red )
3 roma tomatoes , diced
1 cup fresh parsley , unpacked with stems removed
1 cup fresh cilantro , unpacked with stems removed
2 celery ribs
1 small onion
2 -3 carrots , peeled
1 -2 tablespoon canola oil
1 large beef bouillon
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon ginger
1/4 teaspoon turmeric
1/4 teaspoon powdered saffron ( for coloring )
1/4 teaspoon cinnamon
1/4 teaspoon garlic powder
1/2 teaspoon smen
3 tablespoons tomato paste
1/2 cup flour
2 eggs , beaten ( optional )
1/2 cup vermicelli , bite size ( optional )
Harira is a traditional soup enjoyed during the month of Ramadan in the Muslim culture. It is often served as a first course to break the daily fast, along with dates and other small snacks. The hearty soup consists of garbanzo beans, lentils, tomatoes, and a variety of spices like turmeric, ginger, and cinnamon. Instructions

1.In a large pot, add the soaked garbanzo beans, brown lentils, diced tomatoes, fresh parsley, fresh cilantro, celery, onion, and carrots.
2.Add enough water to cover the ingredients and bring to a boil.
3.Once boiling, reduce heat to low and let simmer for about 1 hour, or until the garbanzo beans and lentils are tender.
4.While the soup is simmering, in a small pan, heat up the canola oil and add the beef bouillon, salt, black pepper, ginger, turmeric, saffron, cinnamon, garlic powder, and smen. Cook over low heat for a few minutes until fragrant, stirring constantly.
5.Add the tomato paste to the pan and whisk until well combined.
6.Stir the flour and beaten eggs together until a sticky dough forms. Add it to the soup, mixing well to avoid clumps.
7.Break the vermicelli into small pieces and add them to the soup.
8.Continue simmering for another 10-15 minutes, or until the soup has thickened and the vermicelli is cooked.
9.Serve hot and enjoy!
