2 1/2 quarts water

1 whole onion
1 teaspoon thyme
4 teaspoons salt , divided
1 teaspoon pepper , divided
4 tablespoons butter
3 large onions , finely chopped
2 garlic cloves , minced
2 tablespoons flour
1 1/2 cups broth
3 ounces tomato paste

Instructions

2.Bring the mixture to a boil on high heat, then reduce the heat to low and let it simmer for 1 hour.
3.Once the beans are tender, remove the herb sprigs, celery tops, and onion.
4.In a separate pan, melt the butter and sauté the finely chopped onions and minced garlic until they are golden brown.
5.Sprinkle the flour over the onions and garlic and stir well, then add the broth and tomato paste.
6.Cook the mixture over medium heat for 5 minutes until it thickens, then add it to the pot with the white beans.
7.Simmer the mixture for another 10 minutes, then season with the remaining 2 teaspoons of salt and 1/2 teaspoon of pepper to taste. Serve hot.
